I have attached 4 particular recipes, not because of their culinary merits but because of their connection with the church, lent or monasticism. The lentils and pulses used have long been associated with the desert fathers and subsequently with our churches Lenten practices. Of course the monks used much simpler methods for preparing these foods. There is a story that our Sunday/Church school servants love to tell their children about St Arsenius the great. It is told that when the monks would sit down to eat, St Arsenius, who was used to royal food, would without realizing pick at his beans putting aside all the blemished ones (at this point the servant would produce his bowl of fava beans and demonstrate!) The elder arranged to teach St Arsenius a lesson by rebuking another monk for this same inappropriate behaviour. St Arsenius, in humility, realised that this was intended for him and strove to correct this fault. |
